Happy National Cook a Sweet Potato Day!

Say what? I’m not sure who designated this day National Cook a Sweet Potato Day, but count me in!

Do you like sweet potatoes? I didn’t really appreciate them until I started cooking as an adult. My mom didn’t make them very often but I do remember occasionally having them as a kid baked and loaded with butter and cinnamon sugar or in a casserole again drenched with butter, sugar and topped with toasted marshmallows. If it was a ploy to get me to eat my vegetables it worked!

Sweet potatoes are super nutritious and naturally sweet so it’s a shame to negate all of their benefits by drowning them in added sugar. They’re high in fiber, Vitamin A, Vitamin C, potassium, beta-carotene and studies have shown that they have positive anti-inflammatory effects. Now my favorite way to have them is to toss them in a little oil (olive or coconut), sprinkle on some salt and roast them in the oven. MMMMM and so EASY! I could eat these all day and I MIGHT even share them with my husband and 16 year old son.

Sweet Potatoes are also a great addition to soups, stews, can be put in burritos, homemade ravioli and added to salads like these Vegetarian Mexican Salad Boats.
