Happy National Cook a Sweet Potato Day!
Say what? I’m not sure who designated this day National Cook a Sweet Potato Day, but count me in!
Do you like sweet potatoes? I didn’t really appreciate them until I started cooking as an adult. My mom didn’t make them very often but I do remember occasionally having them as a kid baked and loaded with butter and cinnamon sugar or in a casserole again drenched with butter, sugar and topped with toasted marshmallows. If it was a ploy to get me to eat my vegetables it worked!
Sweet potatoes are super nutritious and naturally sweet so it’s a shame to negate all of their benefits by drowning them in added sugar. They’re high in fiber, Vitamin A, Vitamin C, potassium, beta-carotene and studies have shown that they have positive anti-inflammatory effects. You can read more about all of the health benefits of sweet potatoes in this article at Medical News Today.
Now my favorite way to have them is to toss them in a little oil (olive or coconut), sprinkle on some salt and roast them in the oven. MMMMM and so EASY! I could eat these all day and I MIGHT even share them with my husband and 16 year old son.
Sweet Potatoes are also a great addition to soups, stews, can be put in burritos, homemade ravioli and added to salads like these Vegetarian Mexican Salad Boats. Do you have any great recipes using sweet potatoes? I would love to hear about them in the comments below! #BrookviewWellness #NationalCookaSweetPotatoDay
