The world can be easily divided into two factions: Instant Pot Crazies and Everyone Else. If you have an Instant Pot you completely understand what I’m talking about. If not, you MUST buy one and join the dark side. I’m kidding! Kind of.
I was a little hesitant about getting on board with “pressure cooker” thing. All I could imagine was my pot exploding and the aftermath of my kitchen and anyone close by. Curiousity about all the fuss caused me to give in so I did a little research and found one on sale in January. I admit to leaving the kitchen the second after my figure pressed the button. After that? My. Life. Has. Changed.
OK, I might have been a little dramatic there BUT, in all truthfulness I never imagined this appliance would make such a difference in my meal planning. With three busy kids, two part time jobs and aging parents for whom I frequently make meals, ANYTHING that saves time is a life-changer. So why should YOU think about an Instant Pot? Healthy meals fast. When you get home from your busy day and are too tired to cook you can throw frozen chicken breasts in and they’ll be ready in less than 30 mins. No prepwork involved and you hardly have to handle the chicken (BONUS!). Soups cook beautifully and the vegetables stay vibrant rather than losing all of their color. Hard boiled eggs are perfect every time. I especially love this breakfast casserole recipe. I LOVE my slow cooker but who wants to get up 3 hours early to get a casserole started? Not this one.
